A retro-tinged app to serve that's full of fun color and texture and a tasty accompaniment to the loud and sparkly Let's Get HighBall cocktail from Shaker & Spoon's New Frontiers 2 box.
INGREDIENTS
8 oz. brick of cream cheese6 oz. crumbled feta cheese
3 green onion stalks, sliced thin (substitute a handful of chives if preferred)
A handful of toasted pecans, finely chopped
A handful of dried apricots, finely chopped
1/2 teaspoon black pepper
1/2 teaspoon red pepper flakes
1 tablespoon honey
INSTRUCTIONS
1. In a stand mixer fitted with the paddle attachment, cream together chilled feta, chilled cream cheese, honey, & pepper(s) on medium speed until combined
2. Turn out cheese mixture onto plastic wrap & use it to roll the cheese mixture into a ball or log shape
3. Chill mixture in the fridge for 1 hour or the freezer for 30 minutes
4. Mix together chopped pecans, apricots, & green onion & spread the mix out on a baking sheet
5. Once your cheese ball is chilled & slightly firm, remove the plastic wrap and roll the ball in the nut mixture, pressing gently, until fully covered with toppings
6. Serve with toasted bread, crackers, veggies, or chips
